Do you ever think about how tired of you are of creating full meals from scratch and you just want to do a simple based meal? Well, this was me last night. I went off to complete my initial hiring paperwork and complete the standard requirements like a drug test and such. By the time I got back home, I was drained. I still have paperwork to complete when it comes to my new job before it starts on Monday. So yay! And cheers to a new job!
So with all of that going on, making a meal from scratch was a near impossible task. But, I’m so happy to share I begin a new job on Monday as a therapist working with children and I am so happy! It is all about new adventures!
Last night I decided to make a simple meal, but also a hearty meal. I found a great super green noodle and spaghetti sauce that doesn’t have milk in it! So that is good!! Side note: if you are vegetarian, this is a great option as well. You also probably do not have to look at the labels of most spaghetti sauce bottles unless it contains meat. I don’t know many spaghetti sauces that contain meat. However, you have to absolutely check labels when you are vegan. Most things are naturally vegan and we seriously thought that we wouldn’t have to check labels, but there are so many things in our foods that you wouldn’t expect, like milk in spaghetti sauce. All that to say, READ YOUR LABELS! We personally believe that you should naturally read labels and know what you are putting into your body.
Here’s what we had. These were the ingredients used. What you don’t see pictured is the butter spread ingredients. Because your meatballs are already created, you do not need to worry about thawing them out, they will heat up when you add your sauce. Everyone has their method of how to create spaghetti and meatballs. What I did was boil my water for my pasta and cook my pasta. I drained the water, then I added the spaghetti sauce and noodles and meatballs. I let it continue to cook on medium heat until you can cut the meatballs in half and feel they are warm. While your entire mixture is warming up, you can begin to complete the garlic butter spread and heat up/toast the bread. This way you can eat your meal altogether!
Ingredients and How to:
- Sandwich bread for toast or a loaf of bread
- vegan butter
- chives, chopped
- onion powder
- garlic powder
- vegan (dairy-free) spaghetti sauce
- pasta noodles of any kind and type
- vegan meatballs of any flavor (you can also make these from scratch, recipe to follow in the future)
Lastly, enjoy every minute of your quick, healthy meal! It will be absolutely delicious and the best part is that you cut down some time to be able to spend with your friend or family. Or maybe even you have extra time to use for just relaxing and winding down.
